Chef Gordon Ramsay loves his burgers. In Ramsay’s extensive restaurant empire, more than a dozen spots are dedicated to burgers: His restaurant Gordon Ramsay Burger can be found in London, South Korea, and two United States locations, and Street Burger has several locations across the United Kingdom. The Street Burger joints feature burgers with classic toppings like American cheese, bacon, or fried eggs, but it’s the flavors in Ramsay’s vegetarian burgers that really stand out.

Ramsay shared a video on Instagram featuring one menu item he gave an alliterative name: the Butternut Bhaji Burger. Ramsay’s Butternut Bhaji Burger is made from butternut squash and zucchini, topped with lettuce, fresh cilantro, and a thin, yogurt-mint sauce. The video’s caption refers to courgette and coriander, the British-English names for zucchini and cilantro, respectively. Perhaps the most intriguing component of this burger, however, is the thick, orange-brown condiment Ramsay spreads on the bottom bun: That’s mango chutney. The tantalizing blend of sweet and savory ingredients in the chutney adds a layer of Indian-inspired fusion to Ramsay’s already indulgent, flavorful bhaji burger. 

Mango chutney elevates more than just burgers

Chutney is an Indian condiment with chunks of fruit, aromatics, and spices blended or simmered into a thick sauce. Variations of chutney made across the country are seemingly endless. Mango chutney is usually a mixture of unripe green or fresh mango, plus onions, chilies, sugar, vinegar, and spices. Mango chutney is a versatile condiment with a balance of sweetness, acidity, and spice. 

As Gordon Ramsay demonstrated, mango chutney is especially delicious when layered with the mint, cilantro, and garam masala flavors in his vegetarian burger — but you could try it on a beef burger, too. Other dishes that will benefit from a dollop of this chutney include roast chicken, lamb, and turkey: Add it after plating or use it to baste meats while they roast. Mango chutney also pairs well with cheese. Consider adding a small jar to your next charcuterie board with soft cheeses or sliced, hard varieties like cheddar.
